During this Basic Skills Cooking Class, Chef Andy will teach you how to cook with confidence, make healthier and tastier choices, and save money and time. It will also help you build a repertoire of essential culinary techniques.

You’ll cover knife skills, mise en place, sautéing, roasting, grilling, sauce making, vinaigrettes, and basic pastry techniques that you can build on each time you cook and will utilize for the rest of your life.

Day 1

  • Field Greens with Champagne Vinaigrette
  • Triangle Tip Roast with Roasted Mushroom and Shallot Ragout
  • Sautéed Filet of Salmon with Aioli
  • Rice Pilaf
  • Broccoli with Lemon Browned Butter
  • Rustic Apple Crostada with Berry Coulis

Day 2

  • Minestrone with Basil Pesto
  • Classic Caesar Salad
  • Braised Pork Shoulder
  • Creamy Polenta
  • Perfect Roasted Chicken with Mushroom-Marsala Sauce
  • Asparagus Butternut Squash and Roasted Red Pepper Medley
  • Chocolate Pot de Creme
